Bee honey is a nectar of flower plants partially digested in the goiter of a honeybee.
Flower honey is produced by bees in the process of collecting and processing nectar secreted by the nectaries of flowering plants. According to the US National Institutes of Health, honey can be effective in treating burns, wounds, cough, diabetes, mucositis. Honey has proven antimicrobial (antibacterial, antimycotic, antimycobacterial) properties, the interest in which has recently increased.
Natural honey is a product rich in trace elements, enzymes and active substances, therefore it can be considered an allergen. However, in practice, negative reactions to honey are found only in 0.8% of people. But anyway honey can cause an undesirable reaction if you are allergic to bee products. It is recommended for pregnant women to be careful with honey. During lactation honey can possibly cause allergic effect in a child. It is also not recommended to take for children under 3 years.
Chemical Composition of Honey
Carbohydrates (about 82%): monosaccharides  fructose (38.2%) and glucose (31%); disaccharides (~9%) sucrose, maltose, isomaltose, maltulose, turanose and kojibiose; oligosaccharides present (4.2%), including erlose, theanderose and panose.
Proteins and Amino Acids: a number of enzymes, including invertase, amylase, glucose oxidase, catalase, acid phosphorylase; eighteen free amino acids, of which the most abundant is proline.
Vitamins, Minerals and Antioxidants: trace amounts of the B vitamins riboflavin, niacin, folic acid, pantothenic acid and vitamin B6; ascorbic acid (vitamin C), and the minerals: calcium, iron, zinc, potassium, phosphorous, magnesium, selenium, chromium and manganes; antioxidants: flavonoids - pinocembrin, a unique to hony and bee propolis. Ascorbic acid, catalase and selenium are also antioxidants.
Other compounds: organic acids - acetic, butanoic, formic, citric, succinic, lactic, malic, pyroglutamic and gluconic acids, and  number of aromatic acids.
The healing properties of honey were demonstrated in a study comparing honey treatment to that of silver sulfadiazine, the standard treatment, for burn victims. The results show that honey treatments result in a much greater sterility of the wounds, a faster rate of healing, and a faster onset of healing.
What you should know about honey
Honey is usually immature and moist before August. When the bees decide that honey is ready they seal each cell with a wax cap and usually it happens in August. Bees produce this wax with special antibacterial additives to keep the honey well. This wax is called “zabrus”, it is very appreciated for its healing properties.
The more viscous the honey, the better it is (dense, almost solid). Density shows how much water is in honey. If the honey is dense there is less water (and moreover the honey is not diluted with water), so there are many useful trace elements.
Some beekeepers feed their bees with sugar syrup; in this case honey loses its healing properties.
Do not warm or boil honey it loses healing properties as well.
Natural honey, as a rule, has a sweet taste. Sharp sourish taste is inherent only in rotten, fermented honey.
