    The process of making cream involves taking finished syrup to a temperature;  about 20 degrees over the boiling point of water, then cooling to around 125F and stirring.    The art in the process comes from picking the right grade and taste of maple syrup to start, the rate of temperature change during cooling, and the stirring.
    Maple Cream is made only from maple syrup and contains no dairy or other products.   It's name comes from its smooth consistency, which is similar to peanut butter and easily spreadable.   It can be used instead of butter on toast, spread on pancakes, waffles, and French toast, used as a glaze on meats or roasted vegetables, or used as frosting on cakes and pastries.
    The maple syrup we use for this maple cream is processed by us in the traditional way in small batches with utmost attention to quality and purity.  We strive to boil the sap the same day it is collected and we use stainless steel tanks, fittings, pans, and utensils to produce the purest tasting maple syrup available.
    We manage our sugar maple forest for sustainability and conservation. Many of our trees have been tapped for over 100 years and we want to ensure they'll be around for another 100!
