Raw honey can be stored indefinitely, at roomtemperature. All honey will crystallize over time, especially raw honey. Crystallization of honey is a natural & inevitable process. Honey contains more than 70% sugars and less than 20% water and is naturally an unstable super-saturated sugar solution. The composition ratio of glucose and fructose in a nectar source determines how fast the honey crystallizes. Honey varieties with a low fructose to glucose ratio will crystallize quickly.
Crystallized honey can be re-liquified byheating it slowly to 100-110°F. Heating it at higher temperatures can harm the beneficial enzymes and alter the taste.
